Smoked Baked Beans
- 1 lb navy beans
- 3/4 cup molasses
- 1/2 tbsp salt
- 1 tsp black pepper
- 1/2 tbsp ground cloves
- 1 cup chopped onion (or 1/4 C dried)
- 1 lb brisket, pulled pork, or bacon (optional, all are great but I like brisket the best)
Sort and rinse beans, soak overnight.
Drain, then add to pot with 8-10 C cold water. Bring to boil, then reduce heat. Simmer 1-2 hours or until tender. Drain.
Mix remaining ingredients with 2 C water in dutch oven and bring to boil. Gently mix in beans. Add water to top of beans if necessary.
Bring grill to 250°F with light smoke. Cook beans for 2-3 hours or until sauce thickens, stirring occasionally.
- Can be eaten immedietely, but for best flavor refrigerate overnight.
